Yep still good....does it freeze well? Like cut u and stuff? or does anyone have reciipes for fresh pumpkin...I have never tried.

Pumpkin bread is always a good way to use up the pumpkin! I haven't ever done it, but I assume you peel & shred it up while raw.... at least that's how I do it with zucchini! Very Happy

found it!!
PUMPKIN MUFFINS
1 c. pumpkin
2 eggs
1/2 c. grated carrots
4 tbsp. raisins
1 tsp. vanilla
8 pkgs. Sweet 'n Low
2/3 c. non-fat dry milk
2 tsp. pumpkin pie spice
1 tsp. cinnamon
6 tbsp. flour
1 tsp. soda

Combine dry ingredients. In a separate bowl, combine beaten eggs and vanilla. Add pumpkin and mix well. Add dry ingredients, carrots and raisins. Spray muffin tins with non-stick spray. (DO NOT USE PAPERS.) Bake 15 minutes at 350 degrees.

Pumpkin puree freezes well and cans also.
Make Pumpkin butter if you like?
I have a recipe i use.
Or Pumpkin Bread, or Pumpkin Pie. Or Pumpkin cookies.
