Chestnut & butternut squash Stufing {savory}
1tbsp olive oil
15g butter
1 onion finely chopped
1 small butternut squash, peeled & chopped
2 rosemary spriggs, chopped
2 celery sticks, chopped
1 firm pear, chopped
200g pack, peeled & cooked chestnuts, roughly chopped
2 slices walnut bread, around 100g, cut into small cubes
~ Heat the oil & butter in a medium pan, add the onion, fry gently for 10mins
~Add the squash & rosemary, cook until everything is soft & golden
~Add the celery & pear & fry for another 5 mins.
~Add the chestnuts, season& mix well
~Add the bread to the pan & mix everything well together, set aside to cool
~Put the stuffing in a butterd oven proof dish & cook along side your turkey for 30mins or until golden.
