Duskie or cake maker's....
I got a christmas tree cake tin, oh me & the kids are going to have fun making this thing.....but i need help!!
I need a simple sponge recipe but a soft & fluffy one, but one thats not going to fall apart when i cut it in half to add cream, kwim?
I took a picture of the tin, i post tyomorrow when im not intoxicated!!!!

4oz Butter
4oz sugar
4oz Self Raising flour
2 eggs
Cream together butter and sugar, until smooth. Add one of the eggs and mix, then flour and mix then the last egg.
I tend to use the mixture to make fairy cakes but you can use it to make a victoria sandwich by increasing the weights to 6oz or 8oz.
You can also use this as a base to make chocolate cake by adding cocoa powder, coconut cake by adding 2oz dried coconut or fruit buns by adding mixed spice and sultanas
Remember the key to a good sponge make sure you,whisk,whisk and whisk them eggs they need to double in volume before adding anything else! then gently fold in your flour[sieveed]
als you can double the above recipe to increase amount depends on your pan size!! maybe double it and then make fairy cakes out of surplus, this above would do 8-10" pan
you can do it, I`m not intoxicated but my fruit is for my cake to make tomorrow its soak in lots of brandy yummy yummy!¬

I will most probally need to increase as im not sure how big the tin is in oz or weight?
So do i increase by 1 or 2 at a time?
Also how much space do i need to leave between mixture & top of tin, for riseing?

Oh I think I have that pan also, Sarah... it's SO cute!! I have to admit that I usually use a boxed cake mix when I'm making a fancier cake... figure all the work i going into decorating it.

right looking at the pan I would say go for 1 1/2 of the mix or if you want to play safe times the recipe by twice the ingredients a general rule of thumb is 2/3rd for mix. But if you have any left make some cupcakes with surplus

Also when you grease pan up I would also run a tablespoon of flour around and cover the grease
